Whether in human or veterinary medicine, a doctor is not liable for simply an unfortunate result.
What they are liable for is not practicing 'standards of care.' For example, if I do a dentistry on a 16 year old dog, do no preliminary blood work, give no IV fluids, and the dog develops renal failure I could be held liable.
As to what is required pre-op for healthy appearing young dogs, that gets into grey areas.
